Yes you can add as many rating types as you want. To Edit rating types. Please go to Profiles section of vReview then click to edit any profile you want. There you would see option to add or remove these rating types.

Please tell me how can i customize rating types? By default there are "Service, Quality and Support" i want another ones is it possible?
