Is there any update on this? This functionality would be extremely useful so that admins don't have to login to the back-end and check to see if anyone has filled out a quiz.

Yes, We'll hopefully release it next month. We are doing some changes in the way how Questions and Question Groups work with Quizzes.

Yes, the new version i.e. 2.9.0 would have a very flexible notification functionality which can be customized from the backend as per user's requirements.
